"HEDGEHOG DINER" is the nighttime persona of the breakfast spot Earlybirds, which opens at 7:00 every morning.
We invite guest chefs every month, and since the beginning of this year, a diverse lineup of talented individuals has been coming through, serving up plenty of smiles here with their delicious food.
And for the upcoming HEDGEHOG DINER on Friday, September 29th, Mirai, a ramen shop scheduled to open in Gamagori next year, will be joining us to cook their ramen.
After eight years of training at a famous ramen shop, he is currently working on setting up his own restaurant. That location is Gamagori. When I think of Gamagori, the first things that come to mind are Cafe Hiraya and SUNDAY SPICE, both located on the premises of Garage Coffee Company. And, of course, the incredible nighttime feast they host, "TEKIYA BROTHERS." Sojiro-kun, who will be coming to serve us his ramen from "Dashi Men Mirai," is deeply connected to them as well.
Looking at him, you can tell right away that he’s the real deal, can’t you? You just know he’s going to make something amazing.
The ramen I had the chance to sample the other day was truly, without flattery, delicious. True to the "Dashi" (soup stock) in the shop’s name, he has a deep obsession with his broth.
The noodles are handmade. He trained in noodle-making at "Men no Ki Bodai," another familiar and renowned shop in Nishio, and developed them through trial and error. You can’t overlook the deliciousness of the noodles themselves, which are perfectly crafted to complement each type of ramen.
He will be bringing two types of ramen on this day:
"Chuka Soba" (Soy Sauce Ramen) and "Mazesoba" (Mixed Ramen).
When the whole staff tried it, we were all moved, shouting, "It's so good!!!" I was particularly blown away by how delicious the Mazesoba was.
There’s no doubt in my mind that, following the folks at Garage Coffee Company, he is going to be a key figure in creating the "new local" culture in Gamagori. Please come to Nagoya to experience his enthusiasm before the dawn of this new local era.
